In this hands-on class you will learn all you need to know about wafer paper a material that has been around for years, but mostly used in the confectionery industry, think of Nougat.
It only got rediscovered recently for making beautiful edible flowers used in cake decorating. Wafer paper does not get affected by humidity, which makes it a perfect medium for Australian weather conditions. It is also ideal to decorate buttercream cakes, as the blooms are very light and can be kept in the fridge, unlike gum paste flowers.
During this hands-on class, you'll be taken through the basics of wafer paper, how to manipulate and shape the paper into realistic looking petals and foliage. You will also learn different colouring methods as well as making centres from wafer paper. Lastly, you will be using floristry skills to assemble your edible beauties into an elegant floral spray.
